식품공학실험실

연구실소개

식품공학실험실은 전병수 교수님 지도하에 Engineering설계와 Processing Control에 관해 연구한다.
초임계 유체 추출(Supercritical Fluid Extraction) 장치 및 아임계 수 가수분해(Subcritical Water Hydrolysis) 장치를 이용하여 원료로부터 기능성 물질을 추출, 이취성분을 제거하거나, 바이오 필름 및 미립자의 제조를 통해 식품, 화장품, 의약품에 응용 가능한 고부가가치 산업에 중점을 두고 있다.
또한 GC, HPLC 및 UV/VIS Spectrophotometer 등의 기기를 이용하여 원료 또는 기능성 물질의 물리화학적 특성 분석, 지표물질의 정성, 정량이 가능하다.

초임계 유체 추출 장치 (Supercritical Fluid Extraction) : 초임계 이산화탄소를 이용하여 원료의 지질 회수 혹은 이취 제거, 미립자 제조
아임계 수 가수분해 장치 (Subcritical Water Hydrolysis) : 아임계 수를 이용하여 원료로부터 기능성 물질의 추출, 바이오필름의 제조
HPLC (High Performance Liquid Chromatography) : 이동상을 액체로 하여 아미노산, 당, 펩타이드, 인지질 등을 정성, 정량
GC (Gas Chromatography) : 이동상을 기체로 하여 혼합기체시료, 지방산의 분석
분광광도계 (UV/VIS Spectrophotometer) : 빛을 이용하여 식품에 들어있는 유용물질의 활성 측정 Viscometer, 색차계, Rancimat, Cleanbench 등 여러 기자재 보유
